Since the grand opening of the new Estate House seven months ago, homeowners and guests alike have been delighted with the new experience. The popularity of the Estate House is undeniable, we are seeing an ever-growing number of enquiries and bookings coming in from the mainland.
The fabulous renovation has created a magical setting full of authentic and historical charm. The new bar has become the destination on island and is the place to begin your evening, and of course as ever, is a great place to end it! Seon Athill has continued to hone his skills through mixology courses with John Collingwood from the UK. The dedicated wine room and the introduction of Lainie Taillefer as Wine Director now gives wine greater prominence in the Estate House experience. The cuisine produced under the watchful eye of Chef Sylvain is of exceptional quality and comparable to the best restaurants in New York and London. Our Front of House team has been trained by Pedro Amaral and the result is smooth, understated but extremely attentive service leaving you wanting for nothing.
There is a palpable feeling of enthusiasm and positive energy from the moment you step in to the Estate House. The team are bringing the key components of the fine dining experience together with great attention to detail and delivering an experience of which we can all be proud.
Pedro Amaral- Restaurant Manager- Originally from the Algarve in Portugal, Pedro joined us in December 2016 with his Brazilian wife Vanessa and two year old son Anthony. Pedro previously worked at the Michelin star London restaurant Hakkassan and brings his considerable experience in fine dining to the Estate House. His passion about restaurants and food are evident and his ability to inspire his team invaluable.
Matthew Liddell- Chef de Cuisine- Self confessed gourmand Matthew started working in the restaurant business as soon as he completed his Grande diplome de cuisine at Le Cordon Bleu in London. Matthew worked in senior kitchen roles with Alain Ducasse at the Dorchester for nearly five years which is a three Michelin star restaurant in London. In April 2013 Matthew moved to work with Harrods of London as their Head Chef before joining us in May 2017 and we look forward to sampling his work.
